I don't have any suggestions; just a comment. There have been all kinds of articles lately about the need to save emails so that they will be available for discovery in case of a lawsuit. I haven't seen anything that includes practical advice about how to do this or what retention period one should have.
I'll be interested is seeing the responses to your question.
